If there is one thing that I can bank on each day at school, it is that one of the students will always bring an apple to my desk. With there being few apple calories to worry about I am a big fan. I hate most blue cheeses as well. Danish blue especially, and I’m not particularly fond of Stilton. I do like a bit of Roquefort now and then, but I have to really be in the mood for it, and it has to be with good bread and preferably some fruit. Feta is a whole ‘nother animal. I LOVE it!!!! It tends to be much richer than the bleu cheeses, and while it can have a ripe odor, I find it’s flavor to be much more muted than the blues, even in a good well-aged feta, and it has more of a tang, which is a result of feta’s process, as opposed to the full-on moldy musty foot funk from the mold inoculation process of the blues.

Feta is also really good in savory pies (spanikopita, for instance, or an onion and cheese quiche), and I’ve even had desserts which included very mild feta. True feta is made from sheep’s milk or a mixture of sheep’s and goat’s milk. There are also feta “equivalents” made in other countries such as France and Bulgaria, which are frequently sold as “feta” in the US (whereas in Europe the name “feta” is a protected designation of origin).

Some of them are made with cow’s milk. And of course, there are American “feta”s which are also usually made from cow’s milk as it’s cheaper. I like French fetas to eat with bread, or sometimes in salads. The softer, creamier ones are almost spreadable on toast in a crumbly sort of way. The Bulgarian feta I buy in large tubs at a Middle Eastern market which also sells a lot of products from Eastern Europe (go figure!). The brand I like is low-fat, and much creamier and tangier than the French or Greek fetas, and it works particularly well in quiches, tarts, and soufflés, where the tanginess combines well to cut through the richness of the eggs. All this sounds really fattening and are not really weight watchers friendly so watch out. OK, moving on, my favorite combo is with sauteed leeks and cubes of turkey ham, or with spinach. Greek feta I like just to eat cubes of it, or put on salads, or in savory pies as well. You might start with a French feta. Valbreso is a brand of sheep’s milk feta that is well-known and fairly widely available – I’ve seen it in large supermarkets. The logo is green and white with a sheep’s head on it. It’s very mild (many feta connoisseurs actually don’t like it because it’s too mild), moist and creamy. You can serve it as an appetizer with strips of roasted red pepper. Another dish you might enjoy is Htipiti, a Greek feta dip. You take a bit of feta, a clove of garlic, a wee bit of chives, a pinch of peperoncino, some people like to add a bit of oregano (I usually do), and a grinding of black pepper. You blend it all together (usually in a food processor) with a good splash of olive oil until smooths. You can add drained sun-dried tomatoes, or roasted red peppers – they both pair quite well with the cheese, although I don’t believe they are traditional.

When I first noticed my man boobs the only think I could think might be causing it was breast cancer. That just made sense to me, but I didn’t know a lot about it – instead I just worried and worried. I became convinced I had breast cancer and didn’t want to talk to anyone about it. I even worried that if I did an online search my wife would check the history of websites I visited and start to worry about me too. So instead I made an excuse to go off to the local library and checked it out online there. The first thing I learned is that there is a medical word for this problem. It’s called gynecomastia or pseudogynecomastia depending upon what caused it. You can’t imagine my relief at learning that cancer causes just one percent of the cases of man boobs. So now I know more about gynecomastia causes I’m going to see the doctor to get a real diagnosis!

You Do Not Have to Be Fat

You no longer have to be a second-class citizen who people stare at openly on the street. You don’t have to be somebody who isn’t comfortable in your own skin while hiding from the mirror. It’s time to take control of your life and realized there was a lot more out there for you. The world can be incredibly cruel against people who are overweight, and you don’t need to feel the brunt of that.
